Abstract: To mitigate climate change, food systems must reduce their greenhouse gas emissions. For consumers, this means switching to more plant-based diets and wasting less food. A behaviorally informed policy employing nudges—educative and architectural—can be a cornerstone. Plant-based defaults promise large reduction effects while maintaining freedom of choice.
